Make sure your batter has the right consistency.It shouldn’t be runny, nor so thick that it’s hard to stir. You’ve hit the sweet spot when you can pour batter into the pan and it forms a nice round shape on its own. If needed, add up to 1/4 cup milk to thin things out.
Lightly coat your griddle or skillet with oil or butter.I prefer avocado oil for cooking pancakes because of its high smoke point and neutral flavor (butter burns far too quickly). Whichever fat you choose, wipe away the excess with a paper towel so it doesn’t smoke.
Always start with a single test pancake.Once you’ve practiced with one and confirmed your skillet is properly preheated, you can cook several at once. Leave a couple of inches between each pancake for easy flipping.
The pancakes are ready to flip when about 1/2-inch of the perimeter turns from glossy to matte.Don’t expect to see the usual bubbles around the edges with this recipe. The underside should be a lovely golden brown at this point. If you’re unsure, wait a little longer—you don’t want a doughy mess.
As you go, dial down the heat.The skillet keeps getting hotter as you cook. If your pancakes are browning on the outside before they’re cooked through inside, your pan is too hot. Nudge the heat down a touch after every few pancakes.
