I’ve cooked scrambled eggs about a million times in my life, and I’m fiercely particular about them.I lovemy eggsfluffyand piled high with cheese. They must never be mushy, undercooked, or—worst of all—overcooked (that sulfur smell is the worst!). Today I’m sharing my fully perfected technique with you.

This recipe is built for a stainless steel or cast iron skillet. If you’ve ever wondered whether you can make scrambled eggs without a nonstick pan, this post is for you. It absolutely can be done!

With this technique and a little practice, you’ll be turning out beautiful scrambled eggs with barely any mess.Even if you think you’ve already mastered your scrambled egg technique, I bet you’ll find a new trick or two here.

My Best Scrambled Egg Tips

You’ll find the full recipe at the bottom of the post, plus a quick video below. I usually love sharing foolproof recipes, but this one genuinely takes a little practice. Even now, some days my eggs turn out better than others!

If You Accidentally Drop a Bit of Eggshell into the Bowl:

Use the edge of a broken eggshell to scoop the stray bit out against the side of the bowl, or dampen your fingertips with water to fish it out more easily.

Add a Small Splash of Milk.

Or, for ultra-creamy eggs, swap in half-and-half or heavy cream. A splash of dairy tames the eggy flavor (in the best way), gives them a gorgeous pale yellow color, and—most importantly—lends a softer, more tender texture.

Plus a Pinch of Salt.

Salt works behind the scenes to tenderize the eggs.Add it as early as you can, then let the egg mixture rest while you preheat the pan for wonderfully soft, tender curds.

Whisk Well.

I love my small whisk for the job—it beats a fork by a mile. Whisk until the eggs are uniformly golden yellow so you don’t end up with stringy bits of white in the finished eggs.

Let the Eggs Rest Before Cooking.

If you have a few minutes,let the egg mixture come to room temperaturebefore cooking—this little step really helps reduce sticking.

Preheat the Pan to Just the Right Temperature.

This is the real secret to keeping your eggs from sticking to the skillet.Don’t rush this step, and stay focused on the stovetop. Check out my photos and the video below for helpful visuals.

Your skillet is hot enough when you can flick a few drops of water at an angle onto the pan and they dance or skitter across the surface, then evaporate almost immediately.

Your pan isn’t hot enough yet if the drops simply sputter and bubble. If the butter browns the instant it hits the pan, it’s too hot—let it cool down a bit and start over.

How to Season Your Scrambled Eggs

I love folding in freshly snippedchiveswhen they’re thriving in my garden. In fact, I plant them every spring with scrambled eggs in mind! They’re such a simple addition, yet they infuse the eggs with a lovely, subtle onion-garlic flavor.

As a rule, I recommendadding your seasonings once the eggs are off the heat.If you try to cook vegetables first and then add eggs to the same skillet, you’ll often miss the ideal temperature and end up with sticking issues. (Residual oil and stray veggie bits can also give the eggs an odd color.)

Transfer the scrambled eggs to a plate right away to stop the cooking,then fold in extras like sautéed orroasted vegetablesand grated cheese. I love adding a small handful of crumbled tortilla chips, just like in mymigas. A drizzle of sauce—likesalsa, hot sauce, or a dollop of sour cream—is also wonderful.

The Best Cheese for Scrambled Eggs:

You really can’t go wrong here. Grated cheddar, Parmesan, or Monterey Jack all bring bold, cheesy flavor. I especially love stirring crumbled goat cheese or feta into warm scrambled eggs—they melt just slightly and make the eggs unbelievably creamy.

Suggested Equipment

All-Clad D3 12-inch stainless steel frying panorLodge 12-inch cast iron skillet: You need a roomy skillet for cooking eggs. The All-Clad is a splurge, but I’ve bought cheaper lookalikes before, and they always warped over high heat. Either of these skillets will last a lifetime with proper care.

OXO 9-inch whisk: I like to crack my eggs into a glass liquid measuring cup and whisk them with this compact whisk—it stays put and doesn’t flop over the side.

OXO silicone spatula: I’m especially fond of the large red one because its angled edge slides right under the eggs.

Bamboo pot scrapers: Use your silicone spatula or a bamboo scraper to lift any lingering bits of egg from the skillet while it’s still warm.

A note on nonstick skillets:Ipersonallydon’trecommend a nonstick skillet for this recipe, because heating an empty nonstick pan to this temperature can damage the coating and release harmful fumes if it’s Teflon. If you can make perfect scrambled eggs without one, why bother with a pan that wears out and needs replacing every year?
