Are you familiar with migas?If not, allow me to introduce you! Migas (pronounced mee-guhz) are cheesy, softscrambled eggstossed with crumbled tortilla chips that bring a salty, crunchy, corn-sweet bite. You’ll usually find sautéed onions, peppers, or tomatoes folded in too, plus whatever toppings you love.
Migas appear all over Mexico under various names, but this recipe is modeled after the Tex-Mex migas made famous in Austin, Texas. It’s a deeply satisfying, flavor-packed meal you can enjoy for breakfast, brunch, lunch, or even dinner.
I fell hard for migas during a month-long stay in Austin, Texas, about ten years ago.Aliand I ate migas all over town, and naturally, some were better than others.
I went back to Austin with my family over spring break, and came home itching to revisit my old migas recipe. This simplified, improved version makesthe best migas I’ve ever had,in my humble opinion!
The Origins of Migas
In Spanish, migas literally translates to “crumbs,” and there’s a traditional Spanish dish of eggs and breadcrumbs by the same name. For this Mexican-inspired recipe, though, we’re talking about tortilla chip crumbs.
Migas are a little reminiscent ofchilaquiles, a different Mexican dish built around saucy tortilla chips, often crowned with fried eggs. By contrast, migas are mostly scrambled eggs with tortilla chips folded in, plus optional sauces spooned on top.

Not All Tortilla Chips Are Created Equal.
Many recipes insist on frying your own tortilla chips, but quality store-bought chips work beautifully here. Siete’s Maiz chips are absolutely fantastic in this recipe.
Cheddar Beats Monterey Jack.
Cheddar melts just as dreamily as Jack, but brings a sharper, more distinctive flavor to the party.
Veggies Matter.
For the best flavor, I recommend a trio of red bell pepper, red onion, and jalapeño. I also tested this with poblano pepper, but red bell pepper is prettier and lets the tortilla chips’ corn flavor really shine.
Feel free to skip the jalapeño if you prefer a milder dish or just don’t feel like chopping a tiny pepper (it can be fiddly). You can always add a dash of hot sauce at the end to make up for it.
Migas Are Best Served Right Away.
Reheated leftovers are still tasty, but the chips lose their precious crunch along the way. You can always scatter a fresh sprinkle of crushed tortilla chips over leftovers to bring that crispness back.
Top as Desired.
Keep it simple or go all out! I highly recommend a cool dollop of sour cream and a bright squeeze of fresh lime juice. A spoonful of salsa, a few dashes of hot sauce, sliced avocado or guacamole, and chopped fresh cilantro are all wonderful too.
